Warsaw tripe

This time prepared according to Polish recipe.
Ingredients:
Procedure:
1. Pour cold water over well cleaned tripe, bring to a boil, drain, pour hot broth, add salt and cook until tender (fastest in a pressure cooker)
2. Cut the cleaned root Vegetable Recipes into noodles, add a knob of butter and simmer in a little water
3. Cut the soft tripe into noodles about 4 cm long
4. Make a light roux from butter and flour, pour in a little broth from the tripe, stir and boil well
5. Add the Vegetable Recipes, tripe, spices, salt and simmer
6. Before serving, sprinkle the dish with finely chopped parsley.
