Recipe from Italy for a cold appetizer of marinated eel.

1. Remove the skin from the cleaned eel, dry it, roll it up, tie the tail and head and place it in a fireproof dish
2. Add salt, pepper, garlic, onion rings, bay leaf, cloves, vinegar, oil, bring to a boil and simmer over low heat under a lid until the meat is tender and the vinegar evaporates
