Veal “Olives”

Dish of veal leg rolled into a roll.
Ingredients:
Procedure:
1. Tenderize the veal cutlets, season with salt and pepper
2. Roll them up into coils and fasten them with skewers (or thread)
3. Brown on all sides in hot butter
4. Pour the broth over the rolls, place a slice of peeled lemon on each roll and simmer under a lid in a moderately heated oven (at 170 °C for about 1 hour).
