This great recipe for cooking cooked beef tripe comes from French cuisine.
Ingredients:
750 g
of cooked beef tripe
2 pcs
sour cucumbers
1 pk
cucumber leaves
1 pk
onions
2 tbsp
rajski puree
2 tbsp
Dijon mustard
3 dl
beef broth
tr>
2 dl
white wine
smooth flour
thyme
butter
sugar
pepper
salt
parsley for garnish
Procedure:
Fry the chopped onion in butter, dust with flour, prepare the roux.
Pour the stock over the mash, stir, let it warm up.
Add grated cucumbers, Dijon mustard, tomato paste, white wine, thyme, bay leaf, salt, pepper, cook the sauce for 15 minutes, then strain through a sieve.
Add the cooked tripe to the smooth sauce, heat through, season the sauce with salt and pepper, if necessary, and sweeten.
Sprinkle the hot dish on a plate with chopped parsley, serve with baguette or other white bread.
