Boiled Beef in Dill Sauce
Last Updated on
Who doesn’t know dill sauce with boiled beef and bread dumplings? This recipe is a reminder of what good Czech cuisine has to offer.
Ingredients:
Procedure:
1. Cook the beef in lightly salted water for at least 90 minutes, but longer (a pressure cooker will, of course, shorten the preparation of the meat substantially)
2. In the second pot, melt the larger half of the butter, dust it with flour and prepare a roux, which we pour with milk, 300 ml of broth from the meat and cook for 30 minutes
3. Season the sauce with salt, sugar and vinegar, and strain it after stirring
5. Finally, stir in the remaining dill and butter, do not boil it further, just warm the sauce
6. Serve the individual slices of meat topped with dill sauce preferably with bread dumplings.
Note:
For the preparation of the roux see recipe: Sourdough.
