Recipe from Mr. Marounk for mushroom delicacy. It’s made of marinated mushrooms, boiled knee, pork rinds and other ingredients.
Ingredients:
4 jars
of marinated mushrooms in a sweet and sour brine (about 0.3 l)
various types: mushrooms, boletes, chanterelles, chanterelles … (the more species the better)

Procedure:
Place the knee and skin in a pot cover with water, add salt, allspice, bay leaf and cook until tender
.Peel the meat from the knee and mince it together with the skins and garlic and add it to the strained broth in which the knee was cooked
Now drain the mushrooms from the brine, rinse them in a colander and add them to the minced meat in the broth and let them simmer for 10 minutes
