Varied Vegetable Soup

A soup that will fill you up because there are lots of Vegetable Recipes in it. Served with bread, it can also replace the main course.

1. To prepare this soup, prepare two pots, pour water into one of them, salt it and put in it the cauliflower torn into small rosettes and cook it until tender
2. In the second pot, in parallel, sauté in two tablespoons of olive oil the onion, sliced garlic, sliced carrots, celery and capers, all until golden brown, add 10 small cherry tomatoes to these Vegetable Recipes, sauté for a while, add salt, pepper and any other spices to taste
3. Then add a can of peeled tomatoes cut into small pieces and a can of red beans in their own brine
4. Next to the pot we cook the cauliflower, which is almost cooked, and we pour some of the cauliflower broth into the soup, taste and season with salt if necessary
5. Towards the end we drizzle the soup with lemon juice and add the already cooked cauliflower florets to the other Vegetable Recipes.
Recommendation:
The hot soup can be garnished with sour cream, white yoghurt and croutons made from pastry to taste.
