Wine Soup

Soup of white wine, sugar, egg yolks and lemon zest.
Ingredients:
Procedure:
1. Wash the lemons thoroughly and grate the zest
2. Pour the white wine into a saucepan, add the grated lemon zest, sugar, bring to the boil and simmer briefly
3. In another saucepan, whisk the egg yolks in cold water, stir in the hot mulled wine, heat, but do not boil
4. Divide the soup into bowls, garnish with thin slices of zest and serve with shortbread biscuits.
