Brain Souffle

A candle prepared with brains sautéed in onion, egg yolks, egg white snow, coarse flour, butter and other ingredients.

Procedure:
1. Rinse the brains, place in a colander and cover with boiling water, then blanch and cut the brains into smaller pieces
2. Chop the onion into small pieces and divide the egg into yolks and whites
3. Heat the fat in a saucepan, put the onion, the brain and simmer for a while, then let it cool down
4. Cut the mushroom into cubes and moisten with milk, whip the egg whites into stiff snow
5. Then beat the butter with the egg yolks and salt, add the cooled brains, the diced bun moistened with milk, pepper and finally stir in the stiff snow from the egg whites
6. Place the baking sheet in a preheated oven and bake until golden brown
8. Cut the cooled soup into small cubes and serve separately in a bowl with the soup.
