Cottage Cheese Omelette

Egg omelettes fried in butter, filled with cottage cheese, grated parmesan cheese and chopped chives.

Procedure:
1. In a bowl, mix the egg yolks with the cream, salt and ground pepper, then lightly stir in the beaten stiff egg white snow
2. Heat a knob of butter in a frying pan, pour in a quarter of the egg mixture and leave to fry for 3 minutes, then sprinkle with 2 tablespoons of finely grated Parmesan cheese, add 50 g (a quarter) of full-fat cottage cheese, sprinkle with 1/
2 tablespoons of finely chopped chives and fry for a further 2-3 minutes, then flip to pocket
3. Repeat with the remaining ingredients to make 4 omelettes
4. Serve with buttered English bacon.
