Lemon Chicken with Noodles

Roasted chicken noodles served mixed with lemon sauce and noodles.

Procedure:
1. Cut the cleaned chicken breasts into noodles, fry in a pan in heated oil until almost done and then transfer to a plate
2. Pour 250 ml of water into the pan, add freshly squeezed lemon juice and finely grated zest, cane sugar and grated ginger
3. Mix the cornstarch with a little water to a smooth paste, stir it into the pan, bring to the boil, stir, put back the chicken, reduce the heat and let it bubble for a few minutes to make the chicken soft and the sauce thicken
4. In the meantime, cook the noodles in boiling salted water according to the instructions on the packaging, boil the peas briefly in the water, then drain both and mix with the chicken
5. Top with chopped scallions and dry roasted cashews.
