Ham and lettuce rolls with eggplant and cheese

A light dinner for weekdays and weekends. Baked ham with mozzarella and fried, garlic-rubbed eggplant.

Procedure:
1. Fry one inch slices of unpeeled eggplant in olive oil on both sides until golden brown
2. When slightly cooled, rub them with garlic and salt
3. Spread the lettuce leaves on the ham (slices of approx. 15 x 20 cm), place the eggplant slices on one edge, then place half of the mozzarella on top and scatter the parsley on top
4. Roll up tightly, secure with toothpicks or chef’s pins and place in a baking dish
5. Drizzle with olive oil, cover with water (less than a deciliter) and cover with foil
5. Bake for about 15 minutes at 200 °C.
Recommendation:
Serve alone or with any side dish – bulgur, other pasta, bread, potatoes.
