Asparagus

Dietary and very healthy appetizer.
Ingredients:

Procedure:
1. Wash the asparagus and remove the top skins (leaving only the ones at the top of the head)
2. Trim the end of the asparagus (the woody part)
3. Rinse with water and tie 6 pieces together 4. Place in boiling, lightly salted water for 15 minutes
5. Make a light roux with plain flour and butter (see roux)
6. Just before serving, stir in the egg yolk and a drizzle of lemon juice
8. Place the cooked and untied asparagus on a platter and pour the above sauce over it, sprinkle with parsley.
Recommendation:
– Asparagus prepared in this way stands out best between loaves of rice or on a pile of Italian pasta.
