Mushroom cracklings in butter

Lumps of mushrooms fried until crispy, mixed with clarified butter and chopped parsley.

Procedure:
1. Heat the butter in a heavy-bottomed saucepan or lower pot and let it melt over a very low heat to gradually evaporate the water, stirring continuously and collecting the foam, simmer for about 30 minutes, the finished butter should be golden and clear
2. Strain the finished butter through a fine sieve lined with cheesecloth 3. Clean the mushrooms, cut them into 1cm pieces, add salt and fry them in a pan in some of the clarified butter until crisp
