Cold Spicy Eggs

Halves of cooked egg whites filled with a mixture of egg yolks, anchovies, capers, mustard and butter.
Ingredients:
Procedure:
1. Hard boil the eggs, put them in cold water and peel them carefully, split them in half lengthwise and remove the yolks
2. Beat the butter with the anchovies or anchovy paste, add mustard, salt and egg yolks, and mix into a smooth paste
3. Season with chopped capers (you can also add cucumber pieces)
4. Use your hand (soaked in water) to make balls from the yolk mixture, and sit them in the egg white halves
5. Place the tomato slices (pre-salted and drizzled with lemon) on a bowl, place a stuffed egg on top of each tomato, and place the chopped lettuce between the eggs
6. Decorate the surface of the eggs with parsley.
