Excellent potato pagáče made from dough as for lokše, they are delicious, unleavened in our country we call them “pazdernáky”.

It’s good to cook the potatoes in their skins the day before, it’s better to work with the dough then. Peel and finely grate the potatoes, add a little salt and plain flour and knead the dough as for lokše. Do not knead very long, so that the dough does not stick.

Shape the dough into a cylinder, cut it into parts about 1.5 cm wide and roll it out as for a loaf, while dusting with flour. Brush with melted lard, vegetable oil can also be used, season with salt, roll up and twist into a snail shape. Finish by tucking them in at the bottom so that they remain whole and do not open when baked. Squeeze gently. Using a knife, form a lattice on the surface.

Place on a baking tray lined with greased baking paper. Also brush the surface with butter or oil. After baking, brush again with butter. They are a little more labor intensive, but the result is worth it. We have been making them like this for generations. Bake at 200°C until golden. Enjoy!
