Knitted cheesecake with sour cherries

ingredients
300 g semi-coarse flour 1 pk egg yolk 50 g butter 180 ml milk 15 g fresh yeast salt 1 KL granulated sugar (leaven) 1/2 tbsp granulated sugar
Filling:
250 g soft lumpy cottage cheese 1 pk egg 1 pk vanilla sugar 50 g icing sugar 2 tbsp golden cob fresh sour cherries
For spreading:
1 pk egg yolk 1 tbsp milk

The combination of cottage cheese and sour cherries is delicious:))

Cesto: add a teaspoon of granulated sugar, a little flour and yeast to lukewarm milk. Let the yeast rise. Sift the flour, add the sugar, egg yolk, softened butter, salt, risen yeast and make a smooth dough, cover and leave in a warm place to rise to twice its volume.

Filling. You can add more cottage cheese to taste. Wash and pit the cherries.

After the dough has risen, roll it out on a floured board according to the size of the baking tray, a slightly smaller rectangle, as it will get bigger during baking. I used a 30×40 cm baking sheet. Layer about 1/3 of the filling in the centre of the pastry, sprinkle with sour cherries. Cut the edges into strips and alternately fold them over the filling over each other.Press the ends of the cake gently together.

Line a baking tray with baking paper and place the cake on it. Brush the surface with the egg yolk mixed with a tablespoon of milk.Let it proof for about 15 minutes. Bake at 180°C for 30 minutes or as required. The figures are approximate.

After baking, sprinkle with icing sugar. Enjoy!
