This cake was made by our grandmother whenever we came to visit her. It is beautifully juicy and fresh. The recipe is very simple and quick, and the smell of this cake will always remind me of times with her. It’s suitable for an ordinary day, it’s definitely not a festive dessert, but it’s still one of my favorites.
1.
In one bowl, whisk the egg whites with a pinch of salt until stiff and frothy. In the other bowl, whisk the egg yolks with the sugar until frothy. Gradually add the other ingredients to the egg yolks, i.e. oil, milk, flour mixed with baking powder, cinnamon sugar.
2.
Add chopped walnuts and apples cut into small pieces (can also be coarsely grated) to the mixture.
3.
Lightly fold in the beaten egg whites at the end. Pour the batter into a bundt pan which has been greased with butter and dusted with flour.
4.
Place in a preheated oven (180 degrees) and bake for about 35-45 minutes. Test whether the bundt cake is done with a skewer or toothpick. If the dough does not stick, the delicacy is ready and can be served after cooling.
