Steamed buns stuffed with forest fruits

Sourdough:
1/2 pk fresh yeast 1 KL brown sugar 100 ml lukewarm milk
Cesto:
350 g semi-coarse flour 1 pinch salt 4 tbsp sugar 1 pk egg 50 ml milk 50 g butter 250 g cottage cheese 2 packets vanilla sugar 1 tbsp lemon zest

1. In the lukewarm milk, grind the yeast. Let the yeast stand for about 5 minutes, add the sugar and let it work for another 20 minutes. 2. Put the flour, salt, sugar and egg beaten in the milk into a large bowl. Stir the mixture a little, add the sourdough starter, melted butter and knead. Knead for about 20 minutes, when the dough is still thin, add a little more flour. 3. Cover the dough with a tea towel and leave to rise for at least an hour. Then transfer the dough to a floured board, roll it out to a thickness of about 1 cm and cut it into squares with a diameter of about 5 cm. Mix the forest fruits with the lemon zest and sugar. Fill the squares with the fruit, join the edges and shape into buns. 4. Place the buns on a floured tea towel or baking sheet and leave them covered for a while to rise. Place a metal sieve over a pan of boiling water, brush it with butter and place the buns on it. They must not be completely close together, as they will stick together during steaming. Cover the pot with a second pot and steam for about 20 minutes. 5. Remove the buns to a plate, sprinkle with cottage cheese and vanilla sugar and serve immediately.
