200 g deer or roe deer meat 400 g bones 1.5 litres water a little salt 80 g celery 40 g carrots 1 dl white wine 40 g butter 2 pcs egg 1 pcs onion a little ground black pepper 1 tbsp chopped chives 10 dkg breadcrumbs
step
1. Boil the meat and bones in salted water with the chopped celery and carrots. Then add the wine. 2. Remove the meat, mince it, add butter, eggs, finely chopped onion, ground black pepper and breadcrumbs if necessary. 3. Mix everything together well, form the mixture into balls, which we cook in the broth. 4. Before serving, sprinkle with chopped chives.
