Cod with mixed Vegetable Recipes

1. Clean and chop the onion and garlic. 2. Wash, clean and dice the aubergine and courgettes. Wash the tomatoes, halve them, cut out the stems and cut the halves into slices. 3. Heat the oil in a saucepan and briefly sauté the onion and garlic. Pour in the vegetable stock, add the Vegetable Recipes, bay leaves and cook, covered, for 15 minutes. 4. Meanwhile, cut the cod into larger pieces, drizzle with lemon juice, salt and pepper. After 15 minutes, place the fish on the vegetable pieces and cook covered for 15 minutes. Remove the bay leaf and season the mixture before serving.
