Prepare the apples. Grate them and season with cinnamon and vanillin sugar. Line a baking tray ( 35×23) with baking paper. Place the apples on the paper and smooth evenly.

Beat the egg whites separately with the granulated sugar . progressively add the egg yolks and finally the flour while beating continuously. Pour the batter over the prepared apples and bake for about 20-25 min at 180 C

After baking, turn out onto a second baking sheet, remove the paper and leave to cool. Cut the cooled sponge cake into small pieces , prepare the crème Olé as directed, grate the chocolate and can be layered in the prepared jars. They are best from the refrigerator.
