2 pcs pork kidneys 40 g lard 50 g onion to taste ground red pepper 20 g plain flour a little whole black pepper 50 g coarse flour to taste water to taste salt
procedure
1. Cut the kidneys in half and cut out the urinary ducts. Then cut them into thicker cubes, cover with water and bring to the boil. 2. When the water starts to boil, drain the kidneys and pour clean water over them again, repeat this 2-3 times. In this way we remove the urine odour from them. 3. Fry the finely chopped onion in lard, add the red pepper, the drained kidneys and fry. 4. Dust with flour, cover with clean water, season and cook. 5. Boil the gnocchi prepared from flour and water in the finished soup and season with salt.
