1 kg ground beef 200 g sheep or lamb lard 2 pcs onion 1 handful parsley 1 pk egg white 2 tbsp breadcrumbs 2,5 KL Oregano crushed 1 KL ground black pepper 1 KL ground cumin 1,5 KL sumac pepper 1/2 KL baking soda 2 KL salt

Köfte is a very popular and quite common dish in Turkish cuisine. There are several versions of it, which always differ in some way 🙂 I’ll share with you this time this version, which is exceptional because it has sheep/lamb lard in it. Köfte tastes really good 🙂

First we prepare everything we will need. It is best to use the leaner ground beef, as we will be mixing it with the mutton/lamb lard. You can use sheep or lamb lard, just whatever you can get your hands on. It gives Köfte a great taste 🙂 From the egg, we only need the white, which actually serves as glue 🙂 You don’t need to soak it with the yolk unnecessarily. The baking soda will give the Köfte their softness, they will be so fluffy 🙂 As for the salt, I put 2kl, but you are free to put according to your taste.

The step is very simple. In one bowl mix your meat, lard, grated onion,chopped parsley,salt, cumin, ml.pepper,oregano,sumac, egg white, baking soda and bread crumbs. Mix everything well together and let it sit for 1-2 hours. If you have time, let it sit in the fridge overnight. Köfte will taste even better 🙂

Before baking, shape with wet hands such flat thin paws/pancakes.

And finally just fry the Köfte in a little oil on both sides. You don’t need to bake them too long, so they don’t dry out and stay juicy 🙂 They are also great with roasted peppers. As a side dish I usually prepare fries with Köfte, they are the most suitable 🙂 But feel free to have a side dish to taste, it’s up to you.
