Crush biscuits and mix with melted butter. Line a muffin tin with paper cupcakes.

Divide the biscuit mixture into the cupcake cases and press into the bottom of the cupcake cases. Place in the refrigerator to set.

Beat cheese, sugar, progressively add eggs one at a time. Finally, stir in the vanilla and lemon extracts and sour cream.

Divide the filling into the biscuit base. Place in a preheated oven at 150 °C. Bake for about 20 minutes (depending on how the oven bakes).

Bake and cool the cheesecakes, spread with Lemon Curd, decorate with fruit and put in the fridge to chill.
