Tomato soup with mozzarella

400 g tomatoes 1 onion 2 tbsp butter 150 g mozzarella 150 ml tomato puree to taste salt 1 handful basil a little vegetable broth

1. Wash the tomatoes thoroughly, cut in half, remove the seeds and finely chop. Peel the onion and fry it in a saucepan in hot butter. 2. Then add the chopped tomatoes and cook them over a medium heat for about 15 minutes. Pour in the puree, stock, season the soup with salt and pepper and cook for another 10 minutes. 3. The cooked soup can be blended or left with tomato pieces. Garnish with mozzarella pieces and basil.
