600 g apricots 1/2 litre water 120 g sugar 40 g butter for rubbing 60 g plain flour 120 ml whipping cream 200 g cooked rice a little dried apricots for garnish
procedure
1. Wash the apricots thoroughly, stone them and boil them in sweetened water. Make a light roux with the butter and flour, cover with water and add to the soup. 2. Cook the soup over a medium heat, then blend with an immersion blender and serve with rice. Garnish with dried apricots or nuts.
