15 pcs egg 21 tbsp fine granulated sugar 21 tbsp semi-coarse flour 6 tbsp water 1.5 packets baking powder
Punch:
200 ml red syrup (strawberry, raspberry) 100 ml water 100 ml um 1 pk lemon (juice) powdered sugar red gel food colour
Field:
250 g icing sugar 1 tbsp boiling water 2 tbsp lemon juice red gel food colour
For coating the slices:
400 g currant jam

Simple punch cuts suitable for the festive season:))

Doughnuts: In a bowl, beat 5 egg whites with a pinch of salt, beat in 7 tablespoons of sugar, 5 egg yolks one at a time, 2 tablespoons of water and gently stir in 7 tablespoons of flour with half a packet of baking powder. Bake on a baking sheet with higher edges on parchment paper. The baking sheet measures 30×40 cm. Temperature 180°C for 20 minutes. Leave to cool. Bake 3 biscuits, each with 5 eggs.

Punch: Mix syrup, water, um and lemon juice, add sugar and red food colouring dissolved in a little water as required.

Field: sift powdered sugar several times, add boiling water, lemon juice to taste and red food color gel. Stir until the icing is nice and smooth.

Remove the paper and the top layer that formed during baking from the cooled sheets. Brush the first biscuit with a thicker layer of currant jam, attach the second slice, press gently, drizzle with the punch, about 1-2 cm from the edge, brush again with jam and attach the last biscuit. Press gently, refrigerate and chill for about 12 hours.

Pour the icing over the cupcakes, let dry slightly, not completely, so that the icing doesn’t break. Can be decorated with dark chocolate icing. Cut with a hot knife into slices. Enjoy!
