Gluten-free zucchini pancakes

2 pcs medium zucchini 1 tsp salt 1/2 cup gluten-free flour 2 tsp dried oregano 1 tsp ground cumin 2 tbsp fresh dill 1 clove garlic 2 pcs egg pcs black pepper pcs grated nutmeg

A light dinner that will fill you up but is guaranteed not to make you sick. For anyone wanting to try something other than potato 🙂
1.
Wash, dry and cut off the ends of the potato.

Grate on a grater, season with salt and mix.
3.
Let rest for 10 minutes to let the juice out.

After 10 minutes, drain the zucchini of its juices and transfer to a large bowl.

Gradually add all other ingredients – gluten-free flour, dried oregano, ground cumin, fresh dill, garlic, eggs, black pepper and nutmeg.

Mix the whole mixture well.

Heat oil in a pan.
8.
Using a spoon, shape small patties (the size of a pancake) and fry until golden (3 minutes on each side).
9.
Serve alone or with yoghurt dressing to taste.
