Amazing homemade Kaisers (Kaisersemmeln)

1 kg plain flour 450 ml water 200 ml milk 50 g butter 21 g fresh yeast 1 tbsp sugar 1 tbsp salt

Crisp crust and light crumb. Make an amazing breakfast with flavorful, freshly baked pastries. But BEWARE! You definitely won’t be stuck with just one piece. Half a batch is not an option!!! Believe me, you will love this pastry and you will bake it again and again.

In a bowl, first mix the flour with the sugar and salt with a spoon. Add the liquid butter and the yeast swollen in 2 dl of milk. Add the water progressively as you work the dough, according to how the flour drinks. Make a semi-stiff dough, which you knead into a loaf with a little more flour. Cover with a tea towel and leave to rise for 1 hour.

Prepare various seeds for sprinkling, but it is not necessary :-). Next, a little water to rub on the buns before baking and also a little water to put on the bottom of the oven during baking. The water will evaporate out of the little dish during baking and from that our buns will be pleasantly crispy and also much easier to lift when baking :-).

Divide the risen dough into 17 equal parts and knead each piece briefly once more into a loaf. Cover the loaves with a tea towel and leave to rest for 10 minutes.

After the time has elapsed, roll out the loaves and shape / fold by hand into a kaiser shape. It’s best to watch the exact folding in the video, because although I love to list my progress, I really can’t describe the folding 🙂 Finally, place the finished kaiserkas upside down on a floured board and let them rise like this for 20 minutes. They are placed upside down so that they don’t disappear when they rise 😉 During this time, heat the oven to 210 °C and put in a bowl of water, preferably with the water already hot, so that it starts to boil while the oven heats up to 210 °C.

Place the clams on a dry baking tray, brush well with water and spray the baking tray as well. Sprinkle with seeds of your choice and place in the oven to bake for 20 minutes. Actually nice and golden 🙂 You’d better keep an eye on it, as every oven bakes a little differently
