Simple, quick and spectacular breakfast.

Pour water into a low saucepan and bring to the boil.

In the meantime, prepare two baking trays and grease them with butter.
3.
Place an egg in each mould, season with salt and pepper.
4.
Place the moulds with the prepared eggs carefully into the boiling water so that the water is up to the edge of the mould.
5.
Simmer for about 4 minutes, using a ladle to pour the water over the top of the eggs to cover them.
6.
Dry fry the gluten-free bread on both sides in a frying pan and drizzle with olive oil, season with salt and pepper.
7.
Serve on a plate by tipping the egg from the mould onto the toasted pastry.
