Fry the chopped bacon, onion and pressed garlic in the oil. Add the sliced mushrooms, peppers, cauliflower florets and peeled, diced potatoes. Pour in the stock, season with salt and pepper and simmer over a low heat. Finally, add the tomatoes and bring to the boil.
