Chicory pancakes with zucchini

I didn’t really hit on sorghum as balls until recently. Although I know it from my grandmother in the form of whisk, coffee grounds, flakes for porridge or flour for bread, I’ve never eaten it whole. I’ve seen it in the madeira and it grows like a giant grass, next to our fence it grew to 2m tall. I haven’t read on the internet if it is possible to eat sorghum grains raw. But I will read up, at the very least I’ll write to someone nutritionally knowledgeable and prepare an article about sorghum. It’s a great part of the cuisine, it’s gluten-free, storable, nutritious and can be used in soups, in porridges, or cooked as a main ingredient for pancakes. I’m making a tart with seasonal fruit from it. They have flakes of it at the package-free store. In our house it has made its home in breakfast porridge, where I combine it with oats.

We buy peeled sorghum. It can be soaked before cooking to soften the starchy grains. (I cooked them in the same water as I soaked them). Cook properly covered with water, add a little salt, you can also add onions or interesting spices. Strain once cooked.

The pancakes can be baked like a cake. If you put the pancake mixture in a greased quiche tin, they will make a delicious cake. That’s what we eat with lentil dishes.

Let cool. It doesn’t matter if the grains are cooked, for pancakes or baking, it’s just a plus.

Mix the cooled grains with the spices, egg and finely grated and wrung out zucchini. You can also grate it with the skin on, it will have more nutrients in it. After grating, let it sit for a while and squeeze out the water.

You may or may not add breadcrumbs (50-100g). You can enrich the pancakes with pureed, cooked Vegetable Recipes from the soup if you have any left over. If you have cooked legumes, you can add them premixed coarsely and bake them instead of patties, hamburger mix …if you are eating meat, you can mix sorghum instead of rice in the fritters.

Fry or bake patties from the mixture.
