Gnocchi
1 kg potatoes 2 pcs egg yolk 1 pinch ground black pepper 1 pinch salt 200 g semi-coarse flour

2 cloves garlic 70 g parmesan 3 tbsp olive oil 2 tbsp butter to taste salt, ground black pepper 2 handfuls basil leaves a little water in which the gnocchi was cooked

Cook the peeled potatoes in salted water until soft.

Drain, peel and grate or press through a potato press.

Salt and pepper the potatoes and mix with the egg yolks on a work surface.

Then incorporate the flour and work into a soft dough with your hands.

Divide the dough into several, roll out into rolls. Then cut these into small cubes and shape into dumplings.

Heat the oil and butter in a frying pan, add salt, pepper and finely chopped garlic. Sauté everything together for about a minute.
7.
Cook the gnocchi in salted boiling water for about one or two minutes, after they float to the surface.
8.
Toss the cooked gnocchi with the hot garlic mixture, Parmesan cheese, whole basil leaves and finally add a little of the water it was cooked in.
9.
Serve.
