The combination of apples, nuts and caramel makes this delicious cake…
1.
Mix the flour with a pinch of salt, add the cold, chopped butter and use your fingers to bring the dough together to form a crumble, add the egg and water and quickly knead the dough, wrap it in cling film and refrigerate it for at least half an hour
2.
burn the crystal sugar, when it is quite liquid add the nuts, some I put whole and some ground and simmer for a while, then set aside and add the butter a little at a time, incorporating a little at a time, knead until smooth and add a little butter again until finally you get a beautiful shiny caramel…. You may or may not add rum, if you don’t want to fiddle with the caramel use store bought Salko caramel
3.
Divide the cooled dough into two parts, roll out one part and line a round tin with it
4.
Spread the caramel and nuts on the dough
5.
clean the apples, grate, sprinkle with lemon, if the apples are very sour you can add sugar… spread the apples on the caramel, squeeze a little if necessary
6.
roll out the second part of the dough, place on top of the cake, fold the edges and if there is any dough left you can cut out the decorations and place on top of the cake… prick the top of the cake with a fork
7.
bake at 180°C for about 40 minutes… cut the cake only when it has cooled completely
8.
sprinkle the cake with vanilla and cinnamon sugar
