Avocado spread with sun-dried tomatoes

1 pk avocado 50 g dried tomatoes 50 g Lucina cheese 2 tbsp Greek white yoghurt 1 clove garlic salt, pepper black ground lemon juice

A spread full of healthy ingredients. Suitable for breakfast with wholemeal bread or pastries.

Cut a soft and ripe avocado in half lengthwise, remove the pit and carefully scoop out the flesh with a spoon and cut into small cubes. Place in a bowl and drizzle with lemon juice.

Peel and finely chop the garlic. Cut the sun-dried tomatoes into smaller pieces and add to the avocado along with a little of the tomato oil dressing and the chopped garlic.

Finally, add the cubed Lucina cheese and Greek yogurt to the mixture in a bowl.

Season the mixture in the bowl with salt and pepper and mix lightly.

Spread on whole wheat bread and serve with a green salad or other fresh Vegetable Recipes of your choice and taste. Enjoy!
