After Christmas we had a few pieces of sausage left at home. When I was wondering what I could cook with it, I found a recipe for French cassoulet. It’s a great dish, especially for winter weather, when it not only fills you up well, but also warms you up.

Cut the bacon into smaller pieces. Put it in a pan with a little oil and fry it.

Cut the onion and leek into larger pieces. Add them to the pan along with the parsley and bay leaf. Roast it like this until it is glassy.

Pour hot water over the cassoulet base and boil everything together for a while.

Transfer the cooked onions and bacon to the baking dish. Add the beans, tomatoes, salt and pepper. Stir everything together and spread evenly.

Brush the sausage with olive oil and place on top of the mixture. Place the baking dish in an oven preheated to 200 degrees. Allow to bake slowly.

Make the sprinkles. In a cleaver, tear the bun, to which add the garlic, herbs, salt, pepper and olive oil. Mix everything and make a fragrant breadcrumb. When the sausage is cooked, sprinkle it all over the cassoulet. Put the baking sheet back in the oven, turn it on the grill and bake the cassoulet until brown.

Serve the cooked cassoulet with bread. The breadcrumbs on top will be pleasantly crunchy, giving it an interesting flavour and texture.
