Mussels on leek and white wine

500 g mussels 1 pk leek 1 butter 100 ml white wine 1 KL fresh sage to taste salt, ground black pepper

1. Clean the mussels thoroughly either with a brush or a knife. They must all be well closed, if they are very open throw them away. If any are ajar, knock on them and they should close. If it doesn’t, we throw it away again. 2. Heat the butter over a medium heat and lightly fry the chopped leeks in it. When the leeks have softened, season them with salt and pepper and add the chopped sage. Pour the wine over everything, bring to the boil and add the mussels. 3. Cover the pot and after 6-8 minutes the mussels should be cooked. Discard any unopened mussels and serve the rest.
