A delicious simple one-pot meal. I made this dish when we had friends visiting for the weekend and I needed a simple filling meal for a lot of hungry mouths. So adjust the amount of ingredients according to the number of servings.
1. Load the zucchini, I had homemade, so I left the skin on and grated it on a fine grater. Season with salt and pepper, let stand for 10min, let the juices run clear. Wring out and spread in a baking dish. 2. Arrange the crab sticks. 3. In a bowl, whisk eggs with milk or sour cream, season with salt, dried garlic and black pepper. And pour half of it over the zucchini. 4. Clean the potatoes and grate them on a coarse grater. Season with salt and spread in a baking dish. You wouldn’t believe it, but grated baked potatoes don’t taste the same as if they were in slices, at least for me they tasted better this way than classic 😉 Pour the rest of the egg mixture over them. 5. Top with grated cheese. Bake covered in a preheated oven at 220degrees for about 45min.
