1/2 pk onion 2 slices butter 30 g leek white part 2 sprigs fresh thyme 350 g frozen peas pk salt pk black pepper pk sugar 500 ml chicken broth 100 ml 33% cream

A delicious cream that perfectly evokes spring with its colour 🙂

Fry the finely chopped onion in butter along with the leek for about 3 minutes

Add fresh thyme and frozen peas, stir to combine.

Salt, pepper and season to taste.

Pour in the hot stock so that the peas are covered.
5.
Bring to the boil and cook for about 8 minutes, so that the peas retain their beautiful green colour.

Next, add the cream and stir.
7.
Blend the mixture with an immersion stick blender until smooth.
8.
Pass the pea cream through a sieve to get the cream as smooth as possible.
9.
Serve immediately.
