Courgette soup with cauliflower

Admit it, how many kinds of soups can you come up with? Sometimes we go a week with learned soups. Sometimes I invent a different, new one every day. Our kids approach novelty with caution; the first spoonful is crucial. How about you? Will they eat everything you cook them? The one with turmeric is a favourite with us. Consistencies vary. We always make multiple combinations, from coarser chopped veggies, to mini chunks, or a full smooth mix. Vegetable broth with sunchokes often wins out with the kids anyway, and I’ll never get enough of my mom’s. That’s what her huncunts call her whenever we’re going on holidays, to see if she’ll “didik’s” as Linda used to say when she was quite tiny. Since all the cauliflower in my garden was eaten by the “ucholacs”, my friend gave me a proper bouquet of this white delicacy. Now I’m sitting here after midnight with a glass of water, the girls are sleeping in the next room, and I’ve just got a craving for a bowl of warm, fresh soup and I don’t have any. So maybe at least you’ll make it for lunch sometime.

Fry finely chopped onion in oil. Add washed and chopped cauliflower with sliced carrots. Stir, let the aromas mingle and the Vegetable Recipes warm up, cover with water, add the fenugreek, salt and celery with garlic.

When the carrots are soft (not cooked), add the sliced zucchini (I cut it into larger pieces with its organic skin ). Add turmeric and boil for about 5minutes. I made a thick soup.

I took a plate and blended some of it with butter for Linda. I offered her both versions, but she chose the creamy one. In a flash, she licked the full bowl clean and asked for a dollop. I almost passed out because that doesn’t happen to her often . Enjoy.

TIP: my husband also liked the creamy version and added garlic croutons. He also had a dupla. But he wont.
