Fantastic citrus salad

3/4 cup spelt 500 ml water 30 g pistachios 1 pk fennel 1 pk red grapefruit 1 pk orange 1 pk pomelo 1 pk lemon (juice) 1 tbsp honey 1 tbsp salt 3 tbsp olive oil

Vitamin C, fibre, but most importantly great taste in a great citrus and spelt salad that is perfect for cold days.

Place the spelt in a saucepan, cover with water, bring to the boil, cover with a lid and simmer over a low heat for 30 minutes. Let stand (covered) for 10 minutes.

Toast the chopped pistachios in a dry frying pan.

Slice the fennel. Peel the grapefruit, divide it into marigolds and cut them in half. Repeat the same with the orange and pomelo.

Place the fruit and fennel in a large bowl, add the spelt, pour over the lemon juice, honey, oil and salt.

Toss everything together and serve in a smaller bowl sprinkled with roasted pistachios.
