Salmon in butter in spinach coat

4 pcs salmon fillets 4 tbsp butter 1 pk puff pastry 1 packet frozen or fresh spinach leaves 1 pk onion 2 cloves garlic pk salt, pepper, 1 pk egg to coat 100 g hard cheese to grate 2 pk large carrots pk juice of two oranges

Easy and quick, even for New Year’s Eve dinner:

Divide the puff pastry in half and roll out on a floured board

In a saucepan, saute finely chopped onion in oil, add spinach, garlic, salt and pepper to taste, saute for a few minutes to combine flavours.

Place this mixture on the rolled out dough, divide it so that it will fit both halves of the puff pastry. Place the grated hard cheese on top of the spinach.

Curl and roll up the dough on each side, prick with a fork, brush with beaten egg and place in a preheated oven (190 degrees) for about 20-25 minutes. In each oven it is individual.

Wash the salmon, pat dry, cut into fillets (can be bought already cut), lightly salt and place in hot melted butter and roast on each side really only briefly so as not to dry it out.
6.
Place the cooled spinach in its coat on a plate, add the salmon and garnish with grated carrots and orange juice.
