Chicken breasts are a dry meat for many people, but the truth is that you just need to know how to prepare them properly to keep them juicy This is just one option for a great meal made with them. I love making these medallions, they are quick and delicious The good thing about them is that you mix the mixture for them the day before and then just bake them the next day when you want to.

Cut the chicken breasts into small thin pieces and the onion into thin slices. I sliced the onions into thin longer pieces.
