Fresh cake from a bag of frozen forest fruits

Cottage Cheese filling
500 g soft cottage cheese 150 g frozen fruit (forest mix) 50 g crystal sugar 1 tbsp water 1 tbsp fine starch
jelly (for the top)
150 g frozen fruit (forest mix) 50 g crystal sugar 450 ml water 1 packet red confectioners’ jelly

There’s nothing like a simple cake! This one is extra fresh thanks to the cottage cheese and a packet of frozen berries.

Crust: Beat whole eggs with sugar until pale and frothy, add water, oil and mix.

Sieve the flour and cocoa into the mixture and layer the mixed dough into a cake tin (25 cm), the bottom of which has been lined with baking paper.

Bake in a preheated oven at 180°C for about 12 minutes. Leave the shell to cool completely in the tin.

Filling: Heat the frozen fruit and sugar in a saucepan. When the mixture starts to boil, add the starch dissolved in a little water. Boil for a while more, set aside, blend with a stick blender and finally strain into a bowl.

Whisk the cooled sauce with the cottage cheese and spread it on the cooled cake. Refrigerate the tin with the cake and the cake for about an hour.

Jelly: Later in a saucepan, heat the sugar, water, the rest of the fruit and stir in the confectioners’ jelly. Bring to a boil for about a minute, set aside, let cool a bit and carefully pour over the cake. Refrigerate for at least 2 hours and serve.
