Grated cheesecake: an irresistible classic even for pastry beginners

A time-tested recipe that always delights the whole family… Grated cheesecake is a classic of Slovak sweet cuisine and is simply a must in your pastry list. It’s beautifully simple, there’s nothing to go wrong with it and it’s loved by children and adults alike.

Mix the flour, sugar, baking powder and cocoa powder in a bowl, add the cubed margarine or softened butter and, together with the egg yolk, work into a smooth loaf, divide into halves, wrap each separately in cling film and chill in the fridge (30 minutes) or freezer (10 minutes).

Meanwhile, prepare the filling: beat the cottage cheese, icing sugar, egg yolks, lemon zest and vanilla sugar.
TIP: you can spice up the filling with dried fruit or use extract or paste instead of vanilla sugar, which have a more intense vanilla flavour and aroma.

Grease a smaller, deeper baking tray (33×23 cm) with butter and dust with flour, or line with baking paper, and grate half of the dough onto it. Spread the cheesecake filling and grate the other half of the pastry over the filling.

Bake the grated cheesecake at 180 degrees for 30 minutes.
TIP: the cake tastes delicious still lukewarm, but I find it is even better when the dough has set slightly and contrasts nicely with the smooth and flavorful filling.
