Asian seafood soup

4 litres water 2 stalks lemongrass 3 tsp fresh ginger 4 slices galangal 2 pcs chilli pepper 4 pcs lime leaves 3 tbsp oyster sauce 2 tbsp salt 2 tbsp sugar 2 tbsp fish sauce 200 g mixed Asian mushrooms (frozen) 200 g mussels (black mussels) 200 g muesli 350 g calamari 250 g cuttlefish 100 g baby squid 150 g tomato 300 g tilapia (or any white fish) 2 tsp chilli flakes 1 pk lime (lime juice)

Put water in a large pot and add lemongrass chopped into small pieces, erst ginger chopped into small strips, galangal sliced into small pieces, chili pepper and lime leaves. Cook for 15 minutes.

Then season the stock with oyster sauce, salt, sugar and fish sauce. Simmer again for about 10 minutes.

Add mushrooms, mussels, clams, calamari, cuttlefish, small squid, diced tomato, tilapia and stir. Cook everything together for about 30 minutes.

Finish with chili flakes and lime juice.

Serve sprinkled with fresh coriander.
