Udon noodles with peanut sauce and shrimp,

150 g udon noodles 1 tbsp sesame oil 1 tbsp grated ginger 1 tsp drained garlic 150 ml broth 2 tbsp peanut butter 1 tbsp honey 1 tbsp soy sauce 1/2 pk red chilli sauce 300 g peeled prawns 1 handful peanuts 1 stalk young onion fresh coriander mung bean sprouts fresh chilli pepper salt

A selection of Asian ingredients, where udeon noodles will be the main flavour carrier. This version is with prawns, but tofu or chicken can also be enjoyed there.

The first step will be to boil salted water, in which you will then boil the noodles. Don’t boil them longer than 5 minutes, they will cook later in the sauce, they must not be overcooked to begin with.

Have all other ingredients prepared in advance on the side, i.e. peel and grate the ginger and garlic, wash and chop the peppers, peel the prawns out of their shells and roast the nuts in a dry pan, then grind them in a food processor.

Pour the sesame oil into a deeper pan and add the ginger and garlic. Fry them for 30 seconds, stirring constantly. Pour in the stock (ideally made from the cooked shrimp scales and heads, but any stock will do, or at worst water) and add the peanut butter with the honey and soy sauce. Stir thoroughly and cook for 2 minutes at medium heat on the stove.

Stir in the peppers and prawns, cook for a further 2 minutes, then add the noodles. Stir everything thoroughly amongst each other once more, give it one last minute on the stove and set aside. The noodles will still finish cooking in the residual heat from the pan.

Serve topped with a layer of crushed peanuts, finely chopped baby scallions and cilantro, with mung bean sprouts, chili, or even a slice of lime. Instagram : walrus.buko
