500 g chicken breast 400 ml coconut milk (400 ml) 2 tsp curry paste 4 pcs curry leaves 1 pk lemongrass fresh 1 pk medium zucchini 1 pk shimeji mushrooms – can be white, but brown ones have a stronger flavour 1 tbsp fish sauce 2 tbsp tamari sauce (or soy) 1 pk chilli 1 handful fresh coriander 1 tsp dill 1 tsp lemon juice 2 tbsp vegetable oil 1 pk young onion or leek

Massaman curry is a dish that originated in Thai cuisine. It’s a dish that captivated us the first time we tasted it. Even then, we said that we had to try it in our own kitchen and show people that they don’t have to be afraid to make Asian food here. You will definitely find the ingredients 🙂

Heat the oil in a frying pan. Put all the spices (curry paste, tamarind paste, dumbier) into the oil. Fry for a while to bring them to life and make them fragrant.

After frying, add the chopped onions and saute. Then add the chopped chicken breasts and season lightly with salt. Try to saute them so they stay nice and juicy.

And now it’s going to be a quickie. Add the sliced zucchini and shimeji mushrooms and sauté them with the fish sauce for a few minutes. Pour in the coconut milk, add the curry leaves and lemongrass (remember, you have to crush it to release its essences).

Next, just simmer together for a few minutes and season to taste using brown sugar, lemon juice, chilli and salt (or soy sauce). Finally, garnish with fresh coriander.

As a side dish you can use rice or various bread cakes.
