Strawberry slices with mascarpone cream

Cream
500 g Mascarpone 250 ml 33% whipping cream 100 g white chocolate

Light colourful cake with sweet strawberries, mascarpone and white chocolate.
1.
Separate the eggs. Whisk egg yolks with granulated sugar until foamy

Add progressive oil a tablespoon at a time. When the eggs are mixed with the oil, continue to add the milk.

Add the plain flour a tablespoon at a time and finally the baking powder.
4.
Beat the egg whites and a pinch of salt into stiff snow.
5.
Gently fold the beaten cream into the batter.
6.
Divide the prepared dough in half.

Pour half of the batter onto a small baking tray lined with baking paper. Place in a preheated oven at 180 degrees for approximately 12 minutes

Gently stir the sifted cocoa into the other half.
9.
Pour the hot batter onto the same small baking sheet and bake at 180 degrees for approximately 12 minutes.

Let both baked shells cool completely. In the meantime, prepare the cream.

Melt the white chocolate in a water bath and add about 50ml of cream. Leave to cool slightly.

Whisk the mascarpone.
13.
Gently whisk the white chocolate into the mascarpone.

When the ingredients are well combined, carefully fold in the remaining cream and whip until smooth. Care should be taken not to overbeat it.

Prepare a baking sheet or tray. Remove the baking paper from the cocoa dough and place on the baking tray. Spread the fruit jam over the cake.

Spread half of the cream over the jam layer.
17.
Place the sliced strawberries on top.
18.
Place the white pastry on top and press well.
19.
Pipe the second half of the cream.
20.
Refrigerate.

Before serving, sprinkle with chopped chocolate.

Cut into slices and serve.
